AUTHENTIC BIHARI FLAVOURS AT NEEL

Authenticook’s Home Chef Chandana along with the chefs at Neel have curated a menu that captures the true essence of this regional cuisine. All set to take you on a journey, the charming setting of Neel is the perfect venue to soak up all the culinary goodness. The menu is a perfect mix of vegetarian and non-vegetarian delights that will introduce you to some amazingly lesser known dishes of Bihar. Begin your experience with a traditional welcome drink - Mattha a refreshing, spicy drink with mom’s secret spices or a sweet and tangy drink of Jaggery Mint Sherbet. Follow the refreshments by lip-smacking appetizers like the most famous culinary export from Bihar - Litti-Chokha served with traditional accompaniments like aloo chokha, baingan chokha, tamatar bharta, dhaniya chutney & garam ghee and Barra, Kachri, Bhabhra & Aloo Cut - a deep fried delicacy.

For mains, vegetarians can dig into Kathal Ki Tarkari where jackfruit is cooked in mustard oil with native Bihari masalas; Kohra Ki Sabzi, a light preparation where you experience the natural sweetness of the pumpkin with the local tempering and Baingan ka Bachka – thin roundels of aubergine, pan seared in mustard oil.

Non-vegetarians can indulge in the Magadhi Mutton Seekh made with thin slivers of lamb leg cooked over the sigree and the chicken mince balls with rustic spices deep fried to perfection - Chicken Goli. You don’t want to miss the Tamatar Mattar Machli – river fish cooked in a tomato gravy with green peas and the Ahuna Bamboo Chicken - a dish that has chicken cooked in about 28 kinds of spices, marinated overnight, then stuffed in green bamboo and cooked on slow fire.

If that wasn’t enough, there is also Dahi BoondiChenna Jalebi, and Chandrakala that will bowl you over with its sweet flavours, followed by a Maghai Paan to end your satiating meal.

A cook par excellence, Chandana will be cooking a spread and the meal will be served on a traditional patal leaf as is done traditionally. So come and savour the real taste of Bihar!


ABOUT HOME CHEF CHANDANA
Chandana hails from an Aristocratic Bihari family, the Nandkeolyars, who are known to be connoisseurs of good food. She started learning to cook from a very young age, guided by my mother, who was an excellent cook herself and a bawarchi by the name of Maqbool. Her husband has served in the Merchant Navy for past 32 years and both of them are animal lovers, enjoy hosting people at home.
